Brew Guide: Iced Kalita Wave 185

The best part about being in Hawai‘i? It's probably the warm, tropical weather all year 'round! In our cafes, we use the Kalita Wave 185 to serve classic pour overs, but sometimes you just want a cool and refreshing iced drink to remind you of paradise.

Well, great news! The Kalita 185 brew method can actually be modified to a "flash brewed" iced coffee. The ratio of 24 grams of coffee to 400 grams of water will remain the same, but the water will be split into 40% ice in the carafe and 60% hot water for brewing. The recipe ratios, weights, and time windows will be followed as standard with the grinder setting being adjusted as necessary. Let's get brewing!

What you'll need: 

  • Kalita Wave 185 brewer
  • Kalita carafe
  • Kalita filter
  • 24 grams of your favorite coffee 
  • Scale
  • Grinder
  • Water kettle with hot water
  • Bar spoon or tea spatula 
  • Ice
  • Serving glass/cup

Directions:

1. Weigh out 24 grams of your favorite coffee and grind at a fine to medium setting (it should be slightly coarser than table salt)

2. Rinse and pre-heat the Kalita brewer and filter but DO NOT heat the Kalita carafe

3. Add 160 grams of ice into the Kalita carafe

4. Place Kalita brewer on the carafe, add the ground coffee and level it

5. Bloom the ground coffee with 30-40 mL of hot water for 45 seconds

6. After blooming, pour 200-210 mL of hot water to achieve 240 mL total added within 1:30-1:40

7. Use a bar spoon or spatula to gently stir the coffee slurry for 30 seconds

8. Allow the water to draw down with a target finish time between 3:00-3:30

9. Fill your glass/cup with new ice. If it drained too quickly, grind finer next time. If it drained too slowly, grind coarser. Pour, serve, and enjoy!
